A quick & easy bite

Oud Brugge cheese croquette and a croque with Oud Brugge cheese. Make a croque monsieur using Oud Brugge cheese.
Thread three appetiser balls on a skewer and add a triangle of croque monsieur. Place the skewer on top of some raw salad vegetables on a plate.

  • 1 baked potato
  • Cheese croquette Oud Brugge “De Kroketterie” by Amuse croque
  • Dry-cured ham
  • Herbs
  • Vinaigrette dressing: olive oil, parsley, white wine vinegar, salt and pepper, whole grain mustard
  • Mixed salad

Bake a jacket potato. Cut the baked potato in half and remove a small portion of potato. Cut the hot cheese croquette in half and place in the centre of the potato.
Decorate with some dried ham and/ or herbs.
Make a vinaigrette with whole grain mustard.
Arrange some lettuce leaves around the potato/ croquette, season with freshly ground black pepper ‘from the mill’ and drizzle the dressing over the salad. A delicious recipe for a main course.

Beef carpaccio, Oud Brugge cheese croquette, fennel and green celery salad & sour cream with Worcester sauce.

  • 4 slices beef carpaccio
  • 4 Oud Brugge cheese croquettes “De Kroketterie” by Amuse Croque
  • 1dl sour cream
  • 1 tbsp mayonnaise
  • A few drops of Worcester sauce and Tabasco
  • 1/4 fennel
  • 1 stick of green celery
  • A handful of rocket leaves
  • 20g chopped pine nuts
  • Salt and pepper
  • Celery Salt

Cream: mix the sour cream with the mayonnaise, Worcester sauce and Tabasco. Season with salt and pepper.
Finely slice the fennel (using an electric slicer), cut the green celery into thin strips, mix all together with the rocket leaves and sprinkle with olive oil.
Decorate the plate with an elegant stripe of cream and lay a slice of carpaccio on top.
Using scissors, cut the cheese croquette in the middle.
Sprinkle some pine nuts on the salad and season with black pepper and a little celery salt. Place the croquette on top of the salad. Enjoy!
